Recipe Makeover - 4: Sauces, Salad Dressings & Gravies Tips


1. To thicken sauces and gravies without lumping, eliminate fat and instead mix cornstarch or flour with a small amount of cold liquid. Stir this mixture slowly into the hot liquid you want to thicken and bring it to boil.hellmanns-reduced-fat-mayonnaise-dressing.jpg

2. Use reduced-fat Sour cream or reduced-fat Mayonnaise.
Regular Mayonnaise: 1 Cup: 920 Calories, Reduced-Fat Mayonnaise: 760 Calories

3. Chill soup, gravies and stews and remove hardened fat. Reheat to serve.

4. Use low-fat or non-fat yogurt, butter milk or blended cottage cheese to replace regular sour cream or mayonnaise for sauces, dips and salad dressings.

5. If a sauce made with yogurt is to be heated, add 1 tablespoon cornstarch to prevent separation.

6. Try non-cream dressing recipes.

7. Try lemon juice or vinegar for lower-calorie dressings.

8. In salad dressings, decrease the proportion of oil. Try 1/3rd oil to 2/3rd vinegar.
